Vegetarian? Caprese or Harvarti Sandwich. Meat? Prosciutto Caprese. Excellent cheese, from an amazing Cave-Aged Gruyere to hard-to-find Appenzeller to Papillon Roquefort. Locals: Teleme and Baserri.
They used to stare at me blankly when I asked which cheeses were vegetarian, but now they mark which ones use vegetable rennet or microbial enzymes :)
