Ox tripes on skewers were sublime! Udon in chilly braised pork sauce w/ lots of vinegar: brilliant! Pork murger (orig. Roujiamo) (sandwich of Chinese pita). Next time, must try biang biang noodles.

Incredible carnitas taco and stunning smoky mezcal. Popped in by chance on their second night open and not disappointed. Intense deep flavour from the filling with a perfect tortilla!
